Raspberry Ice Cream Sandwiches

From Wolf and Willow

Raspberry Ice Cream Sandwiches

{ makes 6 servings }

1 container (quart size) vanilla ice cream
1 cup raspberries (slightly mashed)
8 oz butter (softened)
3/4 cup caster sugar
2 tsp vanilla extract
1 egg yolk
2 1/4 cups plain flour (sifted)

Prepare the Raspberry Ice Cream
Allow the ice cream to soften a little before transferring to a bowl and stirring through the raspberries. Using a spatula, smooth the mixture into a rectangular container about 1 inch deep, lined with baking paper, and freeze overnight.

Bake the Vanilla Cookies
Beat the butter and sugar with an electric mixer until pale and creamy. Add the vanilla and egg yolk and beat to combine. Beat in the flour until a smooth dough forms. Wrap in plastic and place in the fridge for 30 minutes, or until firm. Meanwhile, preheat the oven to 350 F and line a baking tray with paper.

Roll the dough out between two sheets of paper until 1/4 inch thick. Using a round, fluted 1 inch cookie cutter, cut 12-14 rounds. Bake for 15-20 minutes, or until golden brown. Cool for 10 minutes on the tray, then pop them into the freezer until ice-cold.

Assemble the Sandwiches
Using the same fluted cookie cutter, cut 6 rounds of raspberry ice cream (you may wish to run the cutter under hot water first to make this easier!). Carefully sandwich the ice cream rounds between two vanilla cookies and ta-da, you're all set for Valentine's Day dessert.

p.s. Store them in the freezer wrapped in baking paper for up to a week.

Valentine Treat Cups

Fill plastic cups with delicious candies, then wrap with crepe paper in complementary hues for a sweet gift.

Tools and Materials:

8-ounce clear Solo cup and 8-ounce cup template or
12-ounce clear Solo cup and 12-ounce cup template or
Dixie cup and Dixie cup template
Card stock
Scissors
Edge punch
Craft knife
Double-sided tape
Double-sided crepe paper
Candy
Gold trim
Gold ribbon or rope
Embellishments

Valentine Treat Cup How-To:

1. Print your chosen template on card stock. Cut out with scissors.

2. Punch along dashed line edge with edge punch.

3. Cut out heart shape from center of card stock piece with a craft knife.

4. Wrap card stock around cup and secure with double-sided tape.

Tip: Gently curve card stock with your hands first to avoid the paper cracking and folding when wrapped around cup.

5. Cut a 12-by-12-inch piece of double-sided crepe paper in half. Place double-sided tape along one long edge and wrap this edge around top of cup.

6. Glue gold trim around cup where the crepe paper meets the card stock.

7. Fill cup with candy. Gather crepe paper and tie closed with gold rope. Add embellishments.

To help you create decorative place cards for the Thanksgiving table,

Martha Stewart has free clip art. Download and print the place cards

(cream or neutral-colored card stock will work best),

cut along the dotted line, inscribe your guest's name,

and score down the middle with a bone folder.

You can also make a flat card with a border by using double-sided tape to affix the place-card design to a piece of card stock 1/4 inch larger than the place card. You can punch a hole in it and use twine to tie it to a napkin, or simply tuck it into the napkin.

Pumpkin Spiced Cream Cheese Breakfast Rolls

Rolls:

2 packages/cans Pillsbury Crescent Rolls
4 0z cream cheese, softened
1/4 Cup brown sugar
1/4 Cup canned pumpkin (Libby’s)
1/4 teaspoon ground cinnamon
1/8 teaspoon fresh ground nutmeg

Preheat oven to 350 degrees F. Unroll crescent rolls to form 4 rectangles placed side by side. Pinch seams together to form one long rectangle. Place cream cheese, brown sugar, pumpkin, cinnamon and nutmeg into a mixer; beat until well combined. Spread mixture over crescents leaving a 1/2 inch border around edges. Starting at long end, roll up then cut into 1 inch pieces. Place around 2 9 inch cake pans that have been sprayed with cooking spray. I left the centers open so the rolls form a circle.
Bake for 28-30 minutes or until rolls are golden brown. Remove and let cool for 10 minutes. Frost warm rolls with cream cheese frosting recipe below.

Frosting

4 oz softened cream cheese
1/2 Cup powdered sugar
1/2 teaspoon vanilla
1 Tablespoon canned pumpkin (Libby’s)

Mix all ingredients into a large bowl until smooth. Spread over warm rolls.

Pumpkin Cakes

PUMPKIN CAKES
Makes 48 to 60 mini cakes
1 (15-ounce) can pumpkin puree
3 large eggs
1 cup vegetable oil
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
2 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/4 teaspoon salt

Garnish: decorative skewers or picks

1. Preheat oven to 350°. Line a rimmed 18x12-inch baking sheet with parchment paper. Set aside.
2. In a large mixing bowl, beat pumpkin, eggs, oil, and vanilla at medium speed with an electric mixer until ingredients are well mixed. Set aside.
3. In a medium bowl, combine flour, sugar, baking soda, nutmeg, allspice, cinnamon, cloves, and salt, whisking until well blended.
4. Add flour mixture to pumpkin mixture, beating until just combined. Pour batter onto prepared baking sheet, smoothing with an offset spatula.
5. Bake until a toothpick inserted in the center comes out clean, 17 to 18 minutes. Cool in pan. Freeze for 4 hours.
6. Using a 1 1/2-inch round cutter, cut as many circles from frozen cake as possible, avoiding edges. Slice frozen cake circles in half horizontally. Set aside.
7. Place Cream Cheese Frosting in a pastry bag fitted with a medium star tip. Pipe frosting onto bottom halves of cake circles. Top with remaining cake halves. Pipe a star on top of each mini cake.
8. Garnish each mini cake with a decorative skewer or pick, if desired.

CREAM CHEESE FROSTING

(from Country Living Magazine)

Ingredients

· 1 package(s) (8-ounce) Cream Cheese, softened

· 1/4 cup(s) Pumpkin Purée

· 1/4 cup(s) (1/2 stick) Unsalted Butter, softened

· 1 tablespoon(s) Fresh Orange Juice

· 1 teaspoon(s) Grated Orange Zest

· 1/2 teaspoon(s) Pure Vanilla Extract

· 4 cup(s) Confectioners' Sugar, sifted

Directions

Blend the cream cheese, pumpkin purée, butter, orange juice, zest, and vanilla in a large bowl using an electric mixer set at medium speed until smooth. Add the sugar and continue to beat until light and creamy -- about 5 more minutes.

44. Take a photowalk around your neighborhood and let the kids take photos of the seasonal changes and then create a collage with their photos.

46. Visit the library and check out Fall themed books.

47. Camp Out in your backyard.

48. Make cute button/candy corn napkin rings.

49. Can some jam, veggies, sauces to store up for the winter (introduce your children to hibernation and get some books on animal habitats.)

50. Do one thing each day that relates to the season, bake bread, take a walk, enjoy the crisp air, read a Fall related book, everyday is an opportunity to create memories, spark creativity and enjoy the treasure that life is.

Halloween Treat

Ingredients

1 cup (2 sticks) unsalted butter, melted, plus more, room temperature, for pan
1 cup packed light-brown sugar
1/2 cup granulated sugar
2 large eggs
1 1/2 teaspoons pure vanilla extract
2 cups all-purpose flour (spooned and leveled)
1 1/2 teaspoons coarse salt
1/4 cup each orange, yellow, and brown candy-coated chocolates (from a 12.6-ounce bag)

Directions

Preheat oven to 350 degrees. Brush an 8-inch square baking pan with butter; line pan with parchment paper, leaving a 2-inch overhang on two sides. Butter paper.
In a large bowl, whisk together butter and sugars until smooth. Whisk in eggs and vanilla. Add flour and salt; stir just until moistened. Transfer batter to prepared pan and smooth top. Arrange candies in 12 rows (2 rows per color, repeating once) on top of dough.
Bake until top of cake is golden brown and a toothpick inserted in center comes out clean, 45 to 50 minutes. Set pan on a wire rack and let cool completely. Using parchment overhang, lift cake from pan and transfer to a cutting board; cut into 16 squares.

Halloween is right around the corner. Thousands of children will be out and about that night collecting their bags of goodies. As much fun as those kids will have, Halloween night requires parents to be extra vigilant with their safety.

By following these simple tips, you’ll greatly diminish your child’s risk of injury.

Ensure your child has light reflectors on them to make them more visible in the dark.
Keep your child in your sight. That will allow you to monitor where they are.
Don’t allow teenagers to go out alone. Make sure they are in a group of kids. There’s safety in numbers.
Make sure older children who go out with their friends have their cell phone. Have them check in with you periodically.
Trick or treat in neighborhoods you are familiar with. Being caught out after dark in an area you don’t know is never a good idea.
When you return home, before your child enjoys their treats, check the candy to make sure it hasn’t been tampered with.
When your trick or treating with your children, be aware of where you are and who is around you. While Halloween is supposed to be a night of light-hearted fun for children, there are those who will take advantage of the anonymity of the costumes.

Halloween is a wonderful opportunity for families to spend quality time together indulging in carefree fun. There’s a pure joy in the shrieks and peals of laughter of children as they see the decorations and costumes. You’ll have a timeless memory as you watch your child race up the sidewalk anticipating the candy they’ll receive.

Children grow up so fast. Before you know it they’ll be hanging out with their friends. So enjoy this Halloween but do it safely.

from slipping around and curling with this tried-and-true trick:

Attach a pair of flat, cork-backed rulers along the edges of each corner.

Using a large, heavy-duty needle and monofilament,

stitch through the rug, and tie it around the ruler

in a couple of spots to secure.
